Soft tahini flatbreads

Who can resist to these fluffy and soft breads that can be pared with anything savoury or sweet? In this recipe we serve them with crumbled, soft cheese, honey and fruits but you can also eat them as a side dish or fill or top them with crunchy vegetables and other goodies to make homemade souvlaki, healthy wraps, pizza and other yummy stuff.

Method:

1) Add all the ingredients except from the salt in a bowl and mix them all together. Next, add salt*.

2) Tip onto a lightly floured surface and knead for a few minutes until slightly smooth. Cover with a clean towel and let the dough rest for 1 hour. Divide into 8 pieces and using a roller pin, roll the dough balls. If they stick on the surface, help with some flour.

3) Bake the flatbreads on medium heat in a non-stick frying pan with a little bit of olive oil.

4) Serve the flatbreads warm with crumbled anthotiro cheese or ricotta, seasonal fruits, nuts of your choice and delicious Ergon flower & pine honey.

*Avoid combining salt and yeast from the beginning because salt can ‘burn’ yeast.

350g all purpose flour

120 ml water

100g Ergon tahini

30 ml olive oil

60g Greek yogurt

1 egg

1 teaspoon Ergon flower & pine honey

½ teaspoon salt

2 teaspoons dry yeast
