Tomato fritters, shakshuka style

Feeling hungry? Try this delectable shakshuka, the absolute one-pan dish, perfect for breakfast, lunch, or dinner. Shakshuka is a popular Middle Eastern and North African dish consisted of spicy tomato sauce and eggs, and this time we serve it with a twist, using selected Ergon products.

Method:

In a non-stick pan set in medium fire, cook the Ergon Deli tomato fritters until crispy and golden on the outside. This will take about 5-7 minutes. Set them off fire and let them rest on a piece of paper towel.

In the same pan add some more olive oil and cook the spring onion for 2 minutes. When soft add the Ergon tomato and Florina peppers sauce. When bubbly, break the eggs directly into it. Spoon a little sauce over edges of every egg white to partially submerge and contain it, leaving yolk exposed. Cover with a pan lid and cook for 1 minute.

Uncover and use a spoon το make some wells in order to create space for the tomato fritters. Add them inside and let it cook for one more minute. Set off fire completely.

Sprinkle with the fresh herbs, salt and pepper and drizzle of olive oil. If you fancy, add crumbled feta cheese and you are ready to serve!

Ingredients:

Ergon Deli Tomato Fritters with feta cheese and fresh herbs
(you’ll need 4 fritters)

380 g Ergon tomato and Florina peppers sauce

4 eggs

2 sticks spring onion (cut in thin slices)

Fresh thyme & oregano sticks

1 tsp chilli flakes

Olive oil

Salt & pepper

Feta cheese (optional)
