Simple, Mediterranean potato salad

The classic potato salad gets a make over with bright and bold Mediterranean flavours. Perfect for picnics and work luncheons and a great option for a pantry clean out.


Servings: 4-6
Time: 40 minutes

Method:

1) Set a large pan filled up with water over high heat. Cut the potatoes in cubes and add them into the water together with salt. Boil for 30 minutes, then drain and set aside to cool down.

2) In a large bowl, combine potatoes with all the ingredients, add salt and pepper to taste, toss over scallions and parsley and garnish with samphire.

3) Eat straight from the bowl or serve the potato salad in the middle of the table.

Ingredients:

4 medium potatoes

3 tbsp Ergon Mediterranean Mustard with Aromatic Herbs

Ergon Samphire from Tinos (4-5 pieces)

2 tbsp Ergon Olive Tapenade

2 scallions

A handful of parsley, chopped

Juice of half lemon

40 ml Ergon extra virgin olive oil

Salt & pepper
